Ingredients

For the cod

  • 1.5 kg salted cod fillet (boneless)
  • 100 g coarse salt
  • 1 L vegetable oil (for frying)
  • 200 g all-purpose flour
  • Salt

For the batter

  • 330 g beer
  • 500 g water (room temperature)
  • 18 g dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 500 g all-purpose flour

For the skordalia

  • 1.5 kg potatoes
  • 3 garlic cloves
  • 100 g white wine vinegar
  • 350 g olive oil
  • Salt

For serving

  • Fried potatoes
  • Fried green peppers

👨‍🍳 How to Make Bakaliaros Skordalia

1. Prepare the cod (desalting)

Soak the cod in cold water for 48 hours, changing the water every 6 hours. Make sure the fish stays fully submerged. Once ready, drain and dry well.


2. Prepare the batter

Mix beer, water, yeast, sugar, and salt. Add flour and whisk until smooth. Let it rest for 1–2 hours until airy.

💡 Tip: You can use baking powder instead of yeast for a faster version.


3. Make the skordalia

Boil potatoes until soft. Mash them with vinegar and salt. Blend garlic with olive oil and mix everything together until creamy.


4. Fry the cod

Heat oil to 180°C. Coat the cod lightly in flour, dip in batter, and fry for 4–5 minutes until golden and crispy.
